The hor fun looks really interesting. I don't often see soups with the sort of gelatinous consistency. Do you know what ingredient makes the texture this way? I should like to try it some day. Thank you for sharing.

I think it's from starch or slow-cooked bones, gives it that thick, silky texture. Hope you get to try it!
