CAUSA is the name of this dish, I bought it at La Matriarca a restaurant that has a long history and it is said that the chef has excellent cooking techniques, I would say it is true, the presentation and the flavor of the dish confirm it.
These ribs in barbiquiu sauce, well the chef's technique didn't interest me much when I ate them but I know that for them it is important .
The technique, the presentation, the ingredients, etc, give this result something that we do NOT always appreciate but if we stop to analyze we realize the work that it involves.
Even a coffee and a cake require work, effort, we buy it, we eat it and that's it, but if we think about the work it entails we must be grateful and obviously feel grateful to the people who serve us in different places.
