The fish is raw but when you put lemon juice on the fish it mimics the effect of heat. The fish changes from translucent and "slimy" to opaque (white), firm, and "cooked" in texture. You add the pickled ginger, wasabi, garlic, scallions, daikon radish, or cucumber to enhance the flavors.
