Banana Caramel Muffins

Happy New Year!

Here is hoping 2026 will be superb!

How was your Christmas? Mine was extra special as my Mum and younger sister plus her husband were here for White Christmas experience. We had fun eventhough they were only here for a week. They brought tons of Tim Tams, lollies, and chocolates. Yep. Needless to say I did gain 3 kg within a week, no joke 😅

Anyways. Cheers to 2026!

For today's recipe, you guessed right (if you did guess 🤣)! Muffin recipe time!

2 c flour
1 tbsp BP
A pinch of salt
6 caramels
2 ripe bananas
1 egg
1 c milk
6 tbsp peanut oil
1/4 c dark brown sugar
1 cap vanilla essence

In a bowl, mix flour, salt, baking powder, until well combined

In a food processor, mix banana, vanilla, eggs, milk, sugar, and oil, then pour mixture into dry ingredients, mix until just combined

Divide batter and push in caramel on each

Bake muffins for 18-20 minutes on preheated 400 F

Yummo! Best served still somewhat warm!

Yay for family Christmas! Though one week seems pretty short if they came all the way from this side of the planet O_O How did they enjoy their white Christmas?

They loved it though freaking freezing

When they left it was 42C back in Australia, and when they arrived it was -38C 😅

Took them sledding, Mum went 3 times 🤣

That temperature shift is brutal XD
