Blueberry Cream Dessert

Hi Friends!

It's super smokey outside and orange gloomy sky. Cannot really see the forest from my house as the smoke is too freaking much today 😔 I'm so nervous. Always wishing Summer to hurry come as I don't really like Winter much anymore, and yet, Summer is always on alert due to the wildfires...which most of the times thanks to our fellow human, instead nature causes 😕

I had a wonderful time volunteering at the hospital yesterday. The weather was lovely during, and only later turned smokey, once I got home. There were 8 of us and we were done within less than 4 H, relandscaping the garden bed. I truly appreciate those hard working volunteers, like wow, they are elderly yet with strength and spirit. So proud to work along them. Here is hoping to more great volunteering times with those ladies and gents.

Today's recipe share is yet another tiramisu inspired dessert 😍

1 1/2 c frozen wild blueberries
1/2 c of sugar
1 tbsp lemon juice

2 c milk
2 tbsp blueberry mixture

2 1/2 sleeves of lady's fingers

1 tbsp gelatine
5 tbsp water
1 block cream cheese
1 tbsp icing sugar
1 c heavy whipping cream
8 tbsp Blueberry mixture

In a pot, bring frozen blueberries, sugar, and lemon juice to simmer, then take off from heat, let cool to room temperature, then process until til smooth, either using immersion blender, or food processor

In a small bowl, mix gelatine and water, then heat in microwave for 30 seconds

In a large bowl, mix cream cheese and icing sugar until creamy then cream in 4 tbsp blueberry mixture

Add in heavy whipping cream, continue beating, followed with 4 more tbsp of blueberry mixture and gelatine liquid, until completely combined

Mix milk and blueberry mixture in a bowl, then moisten ladys fingers. Lay ladys finger in a mold

Drizzle top with blueberry mixture, then spread cream. Repeat steps of layering

Chill for at least 2-4 h or overnight before slicing and serving

So good!
