Last night I read the news that it was gonna be 4 C and warning of frost, for a town 1.5 H away. I was like, gosh. It's only July, my garden hasn't given me much harvest, yet. Only a couple of zucchini now and then, as well Hungarian wax peppers. My sunflowers are even just starting to show tiny flowers. So I was worrying all night long. This morning, when I woke up, quickly checked the temperature. 6 C at 6 AM. I hurried went out to the greenhouse. Still good. 14 C inside. Then went around the yard as I have geranium in pots, hung here and there and they don't like the cold at all. I have like 5 pots and didn't think of bringing them in last night 😵💫 I hope they will be okay!
But of course, I am here more to recipe share. So let's talk more of these cookies. In Hungary, we have almost similar and we call it as Diocska. However, these cookies are Russian and/or Ukrainian and they are called Oreshki. My kids love them, either Diocska or Oreshki. I will share Diocska someday as well, but for now, here is Oreshki. They are shaped like walnut (or little nuts) 😊
Important note, you have to use a specific mold or pan for these cookies!
2 1/4 c flour
1 tsp double acting BP
A pinch of salt
1 tbsp sugar
2 eggs
1 tbsp vanilla essence
150 g unsalted butter
1 jar dulce de leche (caramel spread)
In a bowl, mix flour, baking powder, sugar, and salt, until completely combined, set aside
Melt unsalted butter in microwave at 30 seconds
On a separate bowl, beat eggs and vanilla essence together, then pour mixture into dry ingredients, along with melted butter
Mix mixture into a dough
Spoon a tsp each of dough and fill up the mold. Cook cookies for 2-3 minutes on each side, until golden brown (as walnuts can be light brown to dark brown, so can your cookies be, if you want them to be similar to walnut color!)
Cool completely before filling, and cut off excess to more resemble the shape of a walnut
Spoon caramel spread on each cavities, then sandwich them together
