Chicken in Coconut Milk (Opor Ayam)

Good Wet Morning!

Rained from 11 PM last night til 6 AM this morning, on and off. Lots of winds, more to windstorm rather than thunderstorm that we were expecting. I quickly ran inside the greenhouse this morning, just to check whether any of the zucchini or pumpkin needed to get officiated or not 😁

The garden esp the grass for sure, loving our weird weather this year. Lots of rain, just enough sun, and rain, rain, rain. It feels like every 2 days my husband would say "didn't I just cut the grass, yesterday?". So yep, he's been cutting grass 3 times a week, whenever the grass is dry enough 🤣

For today's recipe share. One of the common dish that you would find when there's a celebration in Indonesia. In Canada though, I'd prepare it anytime I'd feel like it 😁

1 whole chicken
1 tbsp cooking vinegar
1 tsp salt

2 tbsp olive oil
1 lemongrass
2 Indonesian bay leaf (daun salam)
2 kafir lime leaf
1/4 heaping tsp white pepper powder
1/4 heaping tsp ground cumin
1/4 heaping tsp ground coriander

1 heaping tsp tamarind
1 tbsp hot boiling water

1 tbsp olive oil
1 small-medium onion
5 candlenut
1 thumb ginger
1/4 c water

1 can coconut milk
1/4-1/3 c water

Cut up chicken into pieces, place them in a large bowl, then sprinkle with salt and vinegar, coat and let stand for 5 mins

Meanwhile, make fine paste put of onion, candlenut, ginger, with the help of water and olive oil, in a food processor

In a small bowl, mix hot boiling water and tamarind, squeeze to combine well, and discard pulp and seed

Into a large pan, pour spice paste and add lemongrass, spice powders, daun salam, and kafir lime leaf, plus olive oil, saute until fragrant

Dump chicken into the pan, coat and cook for 3-5 mins, then pour in coconut oil, water, and tamarind juice, stir to combine well

Cover and cook until chicken totally cooked through, on medium-low heat. The coconut milk will be somewhat oily, and that's what we want

Serve chicken with rice and enjoy!
