Chocolate Banana Pecan Loaf

Happy Monday!

I will be volunteering at the hospital's garden again today. I'm excited. We'll be planting roses, I was informed 😍 On the weekends I volunteered at the ER, nothing crazy, just offering smiles. I loved it 😁😍😁😍

My golden zucchini are growing some, I'm pretty stoked, and my daylilies flowering beautifully. I counted 18 flowers, just beautiful 😍 So in short, I truly had a nice weekend, at home and out 😊

Oh! And I also baked this following loaf. So yep. Nice weekend ❤️🤩❤️🤩

1 super large ripe bananas
1 1/4 c flour
3/4 c sugar
1/4 c cocoa powder
1 two BSoda
A pinch of salt
1 c water
1/4 c peanut oil
1 tbsp vinegar
1 tsp vanilla essence
1 handful pecans

In a bowl, mix flour, sugar, baking soda, cocoa powder and salt

In a food processor, mix bananas, water, oil, vanilla, and vinegar until completely combined

Pour wet ingredients into dry ingredients, mix well

Pour into loaf pan and sprinkle with pecan pieces

Bake on prehetaed 350 F for 35-40 minutes or until knife inserted comes out clean

Cool completely before slicing

I don’t remember if I like pecans but the rest of that looks great 😆

How was rose planting? That sounds potentially scratchy 😆

Walnut works just fine

In fact, if i bake it as cupcakes, i dont add nuts, but buttercream as topping 😊
