Double Chocolate Rhubarb Jam Cookies

Hi There!

Busy day for us today. My youngest has band retreat, my oldest has physics exam, my husband has been in meeting now and then since yesterday, and my cat has been meowing too much, wanting to go out, when there is a fox out there. He doesnt understand that we are trying to keep him safe inside 😵‍💫

I baked a yummo peppermint flavored cookies the other day. I don't know what about cold weather that always makes me want to have anything pepperminty - baked goods wise 😁

However, today I am sharing another cookies instead, using homemade rhubarb jam 😍

2 c flour
1 tsp BSoda
A pinch of salt
1/4 c sugar
1/4 c cocoa powder

1/3 c melted unsalted butter
1/3 c homemade rhubarb jam
2 eggs
1/4 c sugar
1 tsp vanilla essence

1 large handful semi sweet chocolate chips

In a bowl, mix cocoa powder, flour, sugar, baking soda, and salt until completely combined

In a food processor, mix eggs, jam, vanilla, sugar, until completely combined and pour into dry ingredients, as well melted butter, mix to combine well, then add in chocolate chips, mix again

Drop by a cookie scoop on aluminum foil lined pan, and bake on preheated 350 F for 10 minutes, move cookies to cooling rack
