Ginger Chocolate Chip Cookies

Hi Friends!

Super orange sun, super cloudy sky, super smoggy air. Here we go again, I supposed 😕 I know wildfires haven't been slowing down everywhere else, however our days up North were with clear sky. Now wind is blowing back here, carrying a reminder. I hope as September is here, cooler days coming, wildfires will die down big time.

Tomorrow is Labor Day in Canada. 1 more day for the boys to get to stay at home, the back to school will commence. Nobody is ready, esp this momma 🤣 I love when I get up in the morning, spend half H in my greenhouse before I start preparing breakfast and whatnot. With school, I won't have the time for morning at the greenhouse. That's gotta wait when I return from dropping them off at school. Meh 😅 Darn real life duties, taking away my precious gardening time 🤣

Speaking of school, will be muffins and cookie baking time often from now on again, and today, I have a nice ginger cookie recipe to share 😊

2 eggs
1 c peanut oil
1/2 c dark brown sugar
1/2 c sugar
1 cap vanilla essence
2 1/2 c flour
1 tbsp ginger powder
1 tsp Bsoda
A pinch of salt
A pinch of cinnamon powder
A pinch of allspice powder
A pinch of clove powder
1/2 bag of mini chocolate chips

1 tbsp sugar
1 tbsp dark brown sugar

In a bowl, mix flour, baking soda, salt, and spices, set to side

Using food processor, combine eggs, oil, sugars, and vanilla essence

Pour wet ingredients into dry ingredients, mix well, while adding mini chocolate chips

In a small bowl, mix 2 tbsp of sugars

Scoop a dough and roll it on sugar mixture

Bake for 8-10 minutes on preheated 350 F

Cool completely before storing
