It's not even Halloween yet, but it feels like Christmas already as it's pretty much white outside. Snowed throughout Sunday, like crazy, regardless it was only 2 C 😁
I dragged my husband and kids to help me volunteered at the hospital on Saturday, but then I didn't have the time to prepare my garden for the falling snow. I thought it was just gonna be like the past couple of weeks, wet light snow, and melted. Not this time. Darn it 😅
Anyhoo, here is a simple pumpkin pie recipe from our Thanksgiving celebration 😊

3 eggs
1 1/4 c dark brown sugar
2 c pumpkin puree
3/4 c heavy whipping cream
1/4 tsp cinnamon powder
1 store bought Graham crust pie plate
Beat eggs and sugar until changed in color, to pale mixture, for 3-5 minutes


Stir in pumpkin puree, followed with heavy cream, then beat again to combine them well

Pour batter onto pie plate and bake on preheated for 425 F 15-20 minutes, then lower temperature to 375 F and continue baking for 30-40 minutes

Cool to room temperature before chilling for 4H if not overnight
Slice and enjoy!
