Maple Toffee Cookies

Yay! Last Day of School!

How's going, friends 😊 Last night we didn't have internet at all, oh the horror 🤣 I normally read news before bed or watch a movie, til I'm sleepy, but Last night I had to count sheep to fall asleep 🤣 My husband already went to bed so I couldn't grab a book to read as the night light would be too bright for him. So yep, I was there, trying to close my eyes, my mind wondered around, were all the fur babies in, did I lock windows and doors, did I add the detergent before I started the dishwasher etc etc 😅 Yep, that's the hard part for me. I go to bed last making sure everything is good, then I would chat a bit with my sisters, read news, or watch movie before sleep. Without the net, I could do none of those, gosh darnit 🤣

For today's recipe share I have a cookie recipe. Boys were home for 2 days and I baked them these cookies for snacking 😊 Easy to prepare and pretty good if I may say so myself.

2 1/2 c flour
1 tsp Bsoda
a pinch of salt
1 c cooking oil (like peanut or corn oil)
1 c dark brown sugar
1/2 c sugar
2 eggs
1/2 tbsp vanilla essence
1/2 tbsp maple extract
1 c Skorr toffee bits
1 handful walnut
Choc chip as needed (optional)

Mix flour, salt, and baking soda in a bowl, set to side

Chop walnut into fine pieces, set to side

Preheat oven to 350 F

In a bowl, cream sugars, oil, essence and extract until completely combined, then beat in eggs, one at a time

Fold in dry ingredients, followed with toffee bits and walnut pieces

Drop dough per tbsp and top with 1 choc chip each, on ungreased nonstick pan

Bake for 8-10 mins, let stand on pan for 5 mins, then cool completely on cooling rack
