Hi Friends!

Hope this finds you well. I can't believe it's almost the end of the month already. Feels like May was just starting, yet June is almost here. Crazy. One positivity from it is that it's closer to Summer. I've been soaking up vitamin D as much as I could despite rainy days, and by the time Summer is here, I will be Clark Kent, the yellow sun is my power 😁 I don't mind that my skin gets soooo dark during Summer, as long as I get enough vitamin D before Winter comes again 😁

It is a beautiful sunny morning at the moment here. I know I will be sending most of my time in the backyard again, and that means vitamin D time 😍 It's funny how back in Indonesia, people aren't too fond of the sun, as majority prefer lighter skin, but lacking vitamin D is what most don't think about. Regardless in tropical country, one can still be vitamin D deprived, I learned. So here, where Winter is long, vitamin D is almost non existent it feels 😅

For today's recipe, you can lesser the sugar in the dough if you like, or omit the icing sugar. With or without the icing sugar coating, the cookies are good 😊

2 eggs
1 c peanut oil
1 c sugar
1/2-1 tsp orange oil (such as from Lorann)
2.5 c flour
1 tsp BSoda
1/4-1/2 tsp orange coloring powder
1 tbsp grated lemon peel
A pinch or salt
Icing sugar as needed

In a food processor, mix eggs, oil, sugar, and orange oil until completely combined

On a bowl, mix flour, baking soda, food coloring, lemon peel and salt, then pour in wet ingredients, combine well

Shape into balls and roll them on icing sugar, place onto greased pan if not non stick pan, flatten slightly

Bake on preheated 350 F oven for 8-12 minutes

Cool completely before storing
