Super Easy Beef Soup

Happy Sunny Day, Friends 😊

This year I am so tanned. Whenever it's sunny hot, I'd spend as much time as I could in my garden. My husband always reminds me to put on hat and whatnot, but I don't really want to. I wanna soak up as much sun as I could, as I know I am so lacking vitamin D ever since I moved to Canada. The supplement just not helping much, I don't think. My skin is always dry, my body always cracks and moans, and my gosh, my mood, always depressing me 🤣🤣🤣🤣

The cure is obviously cooking and baking for me. So when you see a lot of recipes are shared, that's when am depressed. Since I share almost daily, that means.....yep, I need abundant vitamin D 🤣🤣🤣🤣

2.5 L water
500 g beef cubes
Half bag bow-tie bean curds
4 large potatoes
A bunch of baby carrots
Half bag of green beans
1 head cauliflower
1 small onion
3 garlic
3 candlenut
2 tbsp water
Chicken bouillon powder to taste (or a combo of salt, sugar, and MSG - or Royco/Masako)
White pepper powder to taste

Boil beef in water for 15 minutes, spoon off scums with slotted spoon

Meanwhile, peel and cube potatoes, soak in water. Slice carrots and add them into the bowl as well

Slice green beans, as well cauliflower, and soak them in a separate bowl

Once 15 minutes is up, add in bean curds, and boil for 2 minutes, then add in potatoes and carrots. Bring back to boil, cook until potatoes are tender, about 10-15 mins on medium heat

Meanwhile, process onion, garlic water, and candlenut into a fine past

Once potatoes are tender, add in sliced green beans and cauliflower, plus onion paste. Continue boiling, for another 5-8 minutes

Season with chicken bouillon powder, white pepper powder and MSG if using

Soup is ready to be enjoyed with cooked macaroni if not rice

Looks yum and savory😋 Is there any replace for candle nut? I'd love to try your recipe🤗

Theres no subs to it. Ive tried all kinds of nuts even Brazil nuts, and still no. However, even without the candlenut, just onion/shallots and garlic will do!

The beef soup looks so delicious. 😀😄

One of our family favorites as we can always mix and match the veggies or addons 😊
