Watermelon Pudding (Agar-Agar Semangka)

Happy Wednesday!

I pulled my back on the weekend, and yesterday felt like crazy painful, I couldn't do nothing much, so I had to break my fast around 10 if not 11 AM, to take pain killers. To top that, my youngest has been coughing, snorting, and feverish, so it's slowly creeping on me as well, and I successfully had to take Dayquil later in the day. Meh. Today I feel much better. Back still ouchie tho, and I've been up since after midnight eventho I went to bed at 9 PM, so I had an early sahoor (morning meal before fasting). Around 3 AM, I was like....imma just start my meal now and maybe catch some sleep, but nope, it's 4.19 and I grabbed the phone to type instead 😅 Soon imma chew some vitamins and in the end, I don't sleep at all, school, house chores etc. Gonna be a tiring day. Yikes. I hope I can nap later! 😁

For today's recipe, it's a pudding. You can serve it as is or with custard sauce. Yum. And yes, if your pudding is gooey porridge like, the ones you can find in US and/or in Canada, this isn't it. This is more like jelly 😊

I was hoping to achiever watermelon like pudding, shape and colors, but end result is pretty pastels instead 😁 and PLUS! Somehow my watermelon "seeds" all gathered up on the tip of the pudding, instead spread out 🤣🤣🤣🤣

1 pouch of agar-agar
1 tsp beef gelatin
5-6 tbsp sugar
900 ml full fat milk
Pandan paste, green
Pandan flavoring, such as Mccormick's, clear
Red food coloring
1 tsp basil seeds, optional

Into a pot, pour milk and stir in sugar, gelatin, and agar-agar powder, bring to boil

Take off from heat and divide into 3. Color and flavor one with pandand paste, one with pandan flavoring and red food coloring, and leave one as is.

Into the red/pink bowl, stir in basil seeds and pour mixture into a mold, that's been rinse with water. Let set halfway, then pour from the white bowl. Let set halfway again, then lastly pour in the green mixture.

Chill for 3 H if not overnight. Slice and and enjoy!

I like the combination of colors in your pudding. The shape also reminds my of pyramids! Hehe. And I am sure it also tastes so well! 😍
