Gloomy, kinda wet, Autumn today. I don't like it 😅 Autumn is beautiful when it's not windy, not wet, and not on week days as you are too busy to enjoy the beauty that it holds, again, when its not wet, when it's not windy 😁 When I'm not home, sunny day is out, but when I'm home, sunny day? There is not 😅 I love sharing and whining about the weather. Yep. I'm old 🤣 Living among older farmers a couple of years back, I realized how pretty attuned they were to weather reports. When they missed it on TV, they'd turn on their radios, or they'd call around, go around, to find out what the weather would be 😁
How's the weather on your end? I hope we would not get a snowy Halloween though. Would be nice to go around the neighborhood without winter jacket under the costume 🤣
Anyhoo! Recipe!
2 c flour
1 tbsp double acting BP
A pinch of salt
1/2 c pure cane brown sugar
1 egg
1 avocado
3/4 c milk
6 tbsp peanut oil
1 tsp vanilla essence
White chocolate
Minute oats
Grease muffin pan, set to side
In a bowl, mix flour, sugar, baking powder, and salt
Preheat oven to 400 F
In a food processor, combine avocado, egg, oil, milk, and essence well, then pour mixture into dry ingredients, mix until just combined
Spoon batter per 1/2 cup, into muffin pan, then push in 2 bars each of white chocolate in center
Sprinkle muffins with minute oats and bake for 20 minutes
Cool on rack slightly and serve, should you like to devour them when the chocolate still melting in the center 😊
