When leeks, carrots, and pork are cooked together in a stew, they give a highly flavorsome, healthy, and hearty dish.
Apart from these basic ingredients, I also used celeriac, lemon juice, one bay leaf, salt, pepper, turmeric powder, and olive oil for this recipe.
So, here is how I cooked this delicious and easy dish.
First, I poured the olive oil into the pressure cooker.
Then I took one lemon and squeezed the juice out of it with a squeezer.
I added the lemon juice to the olive oil, and also added the bay leaf.
Then I gave them all a good stir.
I peeled and chopped the carrots, and added them to the mixture of the olive oil and lemon juice, and also gave them a stir after chopping each carrot, to prevent carrots from getting oxidized.
I chopped and washed the leeks thoroughly, and put them into the pressure cooker.
Then I put the pressure cooker on the stove plate and turned the heat on to maximum.
I let the leeks to simmer a bit, in order to become softer, otherwise I wouldn’t be able to stir them inside the cooker.
Finally, I added the pork cuts, salt, pepper, turmeric powder, and the celeriac, which I had chopped before, and shut the pressure cooker.
I kept heat to maximum, until the characteristic “whistle” of the pressure cooker.
Once I heard the whistle, I turned the heat to medium, and let the ingredients pressure cook for half an hour.
In general, whenever I use the pressure cooker, I follow the principle that 1 kilo of pork meat needs half an hour of pressure cooking at medium heat to be nicely cooked.
Since the meat that I used was about 900 grams, the corresponding cooking time was about half an hour at medium heat.
Leeks and carrots require about 20-30 minutes of pressure cooking, depending on how big and hard they are, and how soft you want them to be.
At dinner time, I also added two teaspoons of supermarket mayonnaise to my portion, because I think it makes this dish even tastier.
Finally, I had some beer to drink with it.
