Jackfruit is native to Southeast Asia, a large, spiny fruit that grows straight out of tree trunks like it has something to prove. Inside it’s made up of big bad fleshy pods.
When ripe, those pods are soft and sweet, almost dessert-like. But the real magic happens before it ripens. Unripe jackfruit is firm, fibrous, and surprisingly neutral in flavor.

Made pulled "pork" on toast and must say it becomes something entirely its own, even if it borrows a familiar shape along the way. It's not amazing but can replace a cheap meal.
