Today again 'm going to share the amazing Indian recipe i.e Aloo-baigan(Brinjal- potato), it is prepared with with an equal proportion of potatoes and eggplant with Indian spices. Nothing can bit the aroma and flavor of Indian spices. It's common veggies cook in my house atleast once in a week, even it is easy and quick to prepare, it is also one pot recipe, can be enjoy with Indian Roti or parthan.

Ingredients 📃
• 1 Brinjal/Eggplant.
• 1 Diced Potato.
• 2 slit Green Chilli.
• 4-5 chopped Garlic cloves.
• 1/2 of cumin seeds.
• Pinch of Asafoetida.
• 1 tbsp of Turmeric powder.
• 1/2 tbsp of Red Chilli powder.
• 1 tbsp of Garam Masala.
• Salt to taste.
• 3 tbsp of Mustard oil.
Process📃
Take a kadai, heat the oil, add cumin seeds & asafoetida l, wait for a second, after that add Garlic at Low flame, untill it get Aromatic.
Now add the chopped Tomato, then add the indian spices mentioned above one by one, cooked it low flame untill Tomate get Soft.
Now add Brinjal/eggplant & potato, mux it gently, so that all spices get well coated with it. Keep the flame low, cover it With led, cook it untill brinjal and Potato get Soft.
Once your Brinjal & potato is done, now add the garam masala. At high Flame roast the veggies for 2 to 3 minutes, for more flavour & taste.
Your Brinjal potato is ready to serve. Pair it with Paratha or Roti(indian Bread) or with Stream rice to for more Flavour & Taste.
