- 50 GRAMOS DE FÉCULA DE MAÍZ / 50 GRAMS OF CORNSTARCH
- 1 CUCHARADITA DE MANTEQUILLA / 1 TBSP BUTTER
- 1 CUCHARADITA DE VAINILLA / 1 TSP VANILLA
BIZCOCHO | BISCUIT
- 5 HUEVOS / 5 EGGS
- 1/2 CUCHARADITA DE AZÚCAR / 1/2 CUP OF SUGAR
- 1/4 CUCHARADITA DE SAL / 1/4 TSP SALT
- RALLADURA DE 1 LIMÓN / ZEST OF 1 LEMON

PREPARACION
Particularly, I like to start with the cake, since while it is baking we can advance with the pastry cream, however by explaining the recipe step by step I will begin by explaining how to make a pastry cream, that way we will continue the preparation. To begin, place all the ingredients except the butter and vanilla in a thick-bottomed pot and beat well, then place it over high heat until it reaches a boil, stirring constantly. Lower the heat to medium and continue beating until it has a button consistency.
Pour the mixture into a bowl and add the butter and vanilla and mix until perfectly integrated and pass through a strainer and place on a tray to expand it and facilitate its cooling.
It is covered with baking paper, trying not to leave any air spaces, and it is left to cool before being used in the gypsy arm.

Now, we can start preparing our dough. To begin, preheat the oven to 180 degrees Celsius. Then...The eggs, sugar, lemon zest and salt are placed in a mixer and beaten at high speed for 15 minutes. Then we add the flour.
We continue adding the sifted flour... and finish mixing in the mixer to remove and continue mixing with a wooden spoon with enveloping movements. Place baking paper on a 30x40 cm tray, pour the mixture into it, level it and bake for 15 minutes or until golden brown.
Once the time has elapsed, remove the cake from the oven, spread a cloth that is larger than the tray and sprinkle a good layer of sugar on it, and unmold the cake here (Still Hot).
Roll the cake in the cloth to give it shape and leave it here for at least three minutes.

The cake is spread out again and the pastry cream is very carefully spread, then shaped again.

To decorate, place the powdered sugar passed through a sieve and reserve in the refrigerator until serving.
