Good morning, Hivefood friends! Today, I'm excited to share a recipe for a tasty and nutritious Groundnut Rice Bowl, a traditional Nigerian dish. This recipe combines the nutty flavor of groundnuts with the comforting warmth of rice, making it a perfect breakfast or snack option.
Ingredients:
- 1 cup of rice
- 1/2 cup of groundnut
2 cups of water
- Optional: milk, sugar, or honey
Preparation:
- Soak the groundnuts: Rinse the groundnuts and soak them in water for 6 hours or overnight. This will help to soften them and make them easier
Grind the groundnuts:* After soaking, drain and rinse the groundnuts. Grind them into a smooth paste using a blender or food processor.
- Grind the rice: Grind the rice into a fine powder using a blender or food processor. Set it aside.
- Extract the groundnut milk: Mix the ground groundnut paste with 2 cups of water, then sieve it using a cheesecloth or a fine-mesh sieve to extract the groundnut milk. Squeeze the cheesecloth or press on the solids to get as much milk as possible.
- Cook the groundnut milk: Pour the groundnut milk into a pot and bring it to a boil over medium heat.
- Add the ground rice: Once the groundnut milk is boiling, gradually add the ground rice, stirring constantly to prevent lumps.
- Cook and thicken: Continue cooking and stirring until the mixture thickens and the rice is cooked.
- Add sweetener (optional): If desired, add sugar or milk to taste.
