Pepesu! It's a popular Nigerian snack, especially among children. Pepesu is essentially a crunchy, sweet, and spicy snack made from roasted peanuts or groundnuts. Here's a simple recipe to make pepesu at home:
Ingredients:
- 1 cup raw peanuts or groundnuts
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/4 teaspoon chili pepper or cayenne pepper (optional)
- 2 tablespoons vegetable oil
Instructions:
- Roast the peanuts: Heat a dry pan over medium heat. Add the raw peanuts and roast them, stirring frequently, until they're lightly browned and fragrant. This should take about 5-7 minutes.
- Grind the peanuts: Allow the roasted peanuts to cool. Then, grind them into a coarse powder using a blender or food processor.
- Mix with spices: In a bowl, combine the ground peanuts, salt, sugar, and chili pepper (if using). Mix well.
- Add oil and mix: Add the vegetable oil to the peanut mixture and mix until everything is well combined.
- Shape into small balls: Use your hands to shape the mixture into small balls, about 1 inch in diameter. You should end up with around 20-25 balls.
- Serve and enjoy: Your pepesu is ready! Store them in an airtight container to maintain their crunchiness.
Tips:
- You can adjust the amount of sugar and chili pepper to your taste.
- To make pepesu crunchier, you can add a little more oil and then bake them in a preheated oven at 350°F (180°C) for about 10-15 minutes, or until lightly browned.
- Pepesu is best served fresh, but you can store them for up to 3 days in an airtight container.
I hope you enjoy making and snacking on pepesu!
