HOW I MADE MAI SHAYI NOODLES & FRIED EGGS FOR DINNER

I started my day as early as possible today due to the abundance of unfinished jobs on my table. Surprisingly, starting the day early didn't mean I'd close on time (as I'd have loved to). I had so much to do that the day wasn't enough for me to finish up. Deadlines for some works are fast approaching and this means that I have to spend more time in the shop to finish up so that I'd not disappoint the customers.

As time for dinner was approaching I started thinking of a fast meal that I can prepare for my family within few minutes so that I can return to the shop for some few hours before closing for the day. The only food that came to my mind is noodles. Noodles is often a lifesaver when you're too tired to prepare something too serious. The fact that it can be prepared within a short time frame is also key to its lifesaver factor.

While still in the shop I was using my mind to scan through my kitchen to be sure I had everything I needed. Luckily for me, I had most of the ingredients in the house - they are mostly the basic ingredients such as onions, scotch bonnet, tomatoes and eggs. However, I was craving some fish. But I didn’t have any at home. I had to call my husband to help me get some smoked fish when he's coming back home from work.

The type of noodles I want to make is popularly known as the Mai Shayi noodles. This is a type of noodles that is made by Northern men in their roadside shops and it is unique for its taste and aroma. Perharps, you are at work and you need a quick lunch, you can stopby at a Mallam's shop and request for a plate of noodles. Especially in the Northern part of Nigeria, they can be in seen in almost every corner selling tea, coffee and noodles. These meals are freshly prepared within 10-15 minutes after you have made your order.

Now, stay with me as I walk you through the process of making my noodles.

INGREDIENTS

  • Noodles

  • Scotch bonnet

  • Tomatoes

  • Eggs

  • Smoked Fish

  • Vegetable oil

Step by Step

  • Wash the scotch bonnet, tomatoes and onions with plenty water. Then, slice all of them to your desired sizes and shapes.

  • Next, set your pot on medium heat and add some vegetable oil. Allow the oil to heat up and add your onions. Let it sauté for about 60 seconds.

  • Then add the tomatoes and saute for like 2 minutes before you add your scotch bonnet. Then you can add your smoked fish as well.1000102952.jpg

  • Remember to season with your noodles seasonings. I used four out of the five seasonings that were provided.

  • When that is done, add some water to the pot and allow to boil. When it is boiled you can add your noodles.

  • Cook the noodles for about 3 minutes to avoid preparing an overcooked and overly soft noodles.

  • Stir and mix together with the sautéed onions , scotch bonnet and tomatoes. Cover for few seconds to allow it simmer.

  • Your noodles is done.

  • Now, we'd fry the eggs.

  • Wash the eggs and crack into a bowl. Add some noodles seasonings and pepper. Give it a good mix.

  • Then you place your frying pan on meduim heat. Add some vegetable oil and allow to heat up.

  • Next, add the eggs into the frying pan. Let it sit for some seconds before you flip it over to the other side. Allow the other side to get done and off the heat.

  • Your fried egg is done.

  • Serve your noodles and egg. Enjoy!
