Today, I made porridge beans for breakfast after I had been having some cravings during the week. Beans is one of my best food and it unique because it can be prepared in different ways. That is, it can be cooked with either yam, sweet potatoes, plantain, or accompanied with bread, pap or custard, or garri. Lest I forget you can also cook corn and beans together. Each of those recipes have their unique and distinctive taste which can not be contested. However, the recipe I'm sharing doesn't have any additional ingredient.
Apart from the sweet taste of a well prepared beans, it also offer an array of health benefits and the most popular one is that it is high in protein. Infact, when I was much younger we were told that beans is the major source of protein and we must eat it to grow tall and become a smart person. LOL. Well, it might not be totally false but it is not as deep as that. One notable nutrient that beans also offer is fibre which is the reason you feel full and satisfied for a long time.
So, relax and enjoy the process of making a delicious pot of Nigerian-style Porridge Beans.
Ingredients Needed
4 cups beans
2 tablespoon ground pepper
2 seasoning cubes
1 medium sized onion
Palm oil
Salt to taste
Step by Step
This is one of the easiest meal to prepare but it can also be tricky. The reason is because it can be prepared in few easy steps and the tricky part is that if you don't add the right amount of seasoning or salt you may ruin it.
So, let's begin. The first step is to carefully pick the beans by removing the tiny stones and dirt. Then you continue by rinsing it thoroughly in at least two bowls of water.
Next, place the beans in the pot and pour enough water in the pot that will cover the beans.
Let the beans boil for about 10 minutes and drain away all the water in the pot. This step is quite important if you are prone to experiencing fullness in the stomach caused by gas.
Replace the water with fresh water and continue boiling for about 30 minutes to 50 minutes depending on the type of beans.
When the beans is soft, add your onions, ground pepper, seasoning cubes, and salt.
Let it cook together for about 5 minutes before you add your palm oil.Stir the beans at intervals to prevent it from burning while the palm oil integrates with the other ingredients for some few more seconds.
Your Nigerian-style porridge beans is ready.
You can enjoy your beans like that or pair with bread, pap or custard, garri etc.
