QUICK NIGERIAN BREAKFAST: SCRAMBLED EGGS AND YAM RECIPE

In this post, I’ll be sharing with you how I prepared scrambled eggs and boiled yam for my family as breakfast. One of the quickest breakfast recipe in Nigeria is the ones made with eggs. It is on rare occasions that we eat just eggs in Nigeria. It is commonly paired with other foods such as yam, plantain, noodles, rice and so on.

We attended the first service by 7am and we were already back home before 9.30am. So the next thing is to prepare breakfast for the family as we don't normally eat to church on Sunday mornings except for my son that we prepare tea and bread for. I had all the ingredients that is needed at home as I did some shopping some days back. A point of concern is the increasing cost of yam in the market, yam is now a new gold. The price keeps increasing day by day. I bought 5 tubers for #13,000 ($8.50) and it is really expensive. Apart from the yam, other ingredients needed are still being sold in the same price that it has been for some months now.

Ingredients

  • 3 eggs

  • 3 scotch bonnet

  • 5 medium tomatoes

  • 3 big carrots

  • 1 medium onion

  • 2 tbsp vegetable oil

  • 1 seasoning cube

  • Yam

  • Salt to taste

Step by Step

  • Let's start by prepping the ingredients. Wash your scotch bonnet, tomatoes, carrots and onions. Slice the scotch bonnet, tomatoes and onions to your desired sizes. Use a grater to grate your carrots too.

  • Next, crack the three eggs into a bowl and whisk it. Set aside.

  • Now, in a frying pan placed on medium heat add some vegetable oil.

  • Toss in the onions and sauté for few seconds. Then add the tomatoes next and cook well for about 5 minutes and remember to constantly stir it. Next add the scotch bonnet and stir for about 20 seconds.

  • At this point add your seasonings to the mix accordingly. Make sure you taste it and adjust if the need be.

  • After add your carrots and let it cook for about a minute so that it won't be too soft. We need the carrots still crunchy.

  • Now pour the eggs that you have set aside into the pan.

  • Let the eggs sit for some seconds before you mix them together with the sauce you have been preparing.

  • Let the eggs cook until it is done before you turn off the heat and stir at intervals to prevent it from burning.

  • Serve the eggs with some boiled eggs.
