Desde hace unas semanas inicié un nuevo proyecto personal, se trata de mi emprendimiento de postres llamado Le Sucre. He hecho algunos postres como torta de piña, marquesas de chocolate, tres leches, entre otras, y me animé a hacer por primera vez pie de limón con galletas para la venta.
A few weeks ago, I started a new personal project: my dessert business called Le Sucre. I've made desserts such as pineapple cake, chocolate marquesas, tres leches, among others, and I decided to try making lemon pie with cookies for sale for the first time.

Mi primer desafío fue encontrar unos limones jugosos para que mi mezcla del pie quedara perfecta, elegí los mejores que vi y obtuve una taza de jugo que fue suficiente para mi preparación de 10 mini vasitos.
My first challenge was to find juicy lemons so that my pie filling would be perfect. I chose the best ones I could find and got a cup of juice, which was enough for my recipe for 10 mini pies.

Luego, ese jugo lo mezclé con 500ml de leche condensad y batí hasta que se formara una mezcla cremosa, que sería la protagonista de mi pie de limón.
Then, I mixed that juice with 500ml of condensed milk and beat it until it formed a creamy mixture, which would be the star ingredient of my lemon pie.

La galleta la licué hasta obtener una harina que mezclé con mantequilla derretida para hacer la base, usé 409gr de galleta molida con 200gr de mantequilla derretida, mezclé hasta que me quedó una masa arenosa que coloqué en el fondo de mis vasitos y vertí la mezcla.
I blended the cookies into a flour and mixed it with melted butter to make the base. I used 409 grams of ground cookies with 200 grams of melted butter, mixed until I had a sandy dough, which I placed in the bottom of my cups and poured the mixture over.
Este es el primer intento de muchos que sé que haré, hay muchas cosas que mejorar, pero me gustó mucho el resultado.
