Soon Olivia will be 21 months old and despite having so many food allergies, she has been a good eater, but like some babies or children there are days when she does not want to eat anything, so as a mom I look for ways to get all the nutrients she needs in the dishes she likes such as soup or cream and rice and I tell you that this cremita de auyama or pumpkin that I bring you below is one of her favorites and also offers many important nutrients for their development, I also like it a lot and I love that it is an easy recipe to make.

Para empezar vamos a pelar y lavar muy bien, zanahoria, papa, auyama o calazaba y unas ramitas de cebollín, también lavamos muy bien un poco de pollo y ponemos a hervir agua. Una vez que el agua hierva vamos a agregar todos nuestros ingredientes en ella y dejamos cocinar por unos 30 minutos aproximadamente o hasta que todas las verduras se ablanden. Como ven yo corté la zanagoria en rodajas para que se ablande rápido también, y además si desean pueden agregar otras verduras como coliflor, pimentón o incluso ajo, a mi me encanta con pimentón pero Olivia resultó bastante alergica a este por lo que está descartado en recetas para ella.

Ahora sí a servir, como les dije antes yo le puse un poco de pollo desmechado por encima y a Olivia le encantó tal cual y es que la crema de auyama no necesita mucho y tiene demasiados nutrientes, yo incluso comí un poco y me encantó. La cremita la serví con arroz ya que Olivia es amante del arroz y un poco de aguacate aunque este ahora casi no le gusta a ella pero es una etapa, y como mamá considero importante ofrecerselo aunque ella no lo coma al igual que con otros alimentos.
