Aash Recipe: A Traditional Hazargi Dish

Hello friends how are you all I hope everyone is fine I am also fine. So today again I cooked with my mom and again today I made a Hazargi dish The name of this dish is “Aash” and this is my most favorite dish It is eaten with beef mince My whole family likes this dish so we make it once every month Because this dish is a Hazargi dish so it is eaten in Pakistan and Afghanistan both I have seen this dish in Iran also but when I ate it in Iran its taste was different I did not like it much. The hazaragi one is much better. So now let’s start making my favorite dish aash.


Ingredients needed.

To make Aash we need these things.
Beef 1.5 kg
Aash 1 kg
Spinach 1 kg
Leek 2 bunch
Coriander 3 bunch
Green chilli 7 to 8 pieces
Garlic paste 1 table spoon
Ginger paste 1 table spoon
Red beans 2 cups
Chickpeas 3 cups
Tomato paste 2 table spoon
Dried curd half kg
Red chili powder 1 table spoon
Mix spices 2 table spoon (turmeric red chili powder cumin coriander)
Salt 1 and half table spoon
Cumin coriander 2 table spoon
Dried Fenugreek Leaves 2 table spoon
3 table spoon fried onions
Oil

So to make Aash we need these things.

Preparing the mince.

So first we will make the beef mince To make it first I added a little oil in the pot Then I added the mince in it Now cook it until its color changes a little When its color changes add spices in it like salt red chili powder mix spices cumin coriander Dried Fenugreek Leaves and their quantity I mentioned in the ingredients After adding spices add garlic and ginger paste and also add fried onion Now mix all of these well And add 2 table spoon tomato paste in it Now in the end add water in it.

Adding green vegetables.

After adding water in the mince we will add some green vegetables in it like spinach leek coriander Cut all of them nicely and add them in the mince Now close the lid of the pot and cook the mince until it becomes soft So in this way the mince will be ready.


Cooking the Aash.

Now it is time to cook the Aash To cook it add water in a pot and boil it When it boils add the Aash in it After adding Aash add boiled red beans and chickpeas Now close the lid and cook for some time After cooking for some time add dried curd in it according to taste (first add the dried curd in some water so it melts into the water) Now cook it until the water becomes a little less.


Final result.
