My dear #foodieslovers, I hope everything is going well in your lives and that you enjoy this recipe as much as I do 😊. This time, I'm bringing you a recipe that I made in December but hadn't been able to share with you yet. I think I'm going to do a whole month of recipes to show you the wonderful things I make in my kitchen 🤔, but that's another story. However, why am I posting it now? BECAUSE IT'S ALMOST DECEMBER AGAIN! This year has definitely not given us a chance to catch our breath or lose those extra pounds, and now we're about to decorate our homes again and ask ourselves, “What are we going to make for dinner?”
I don't know if it's a tradition elsewhere, but in my home we are used to making chicken, ham, or some other protein on the 24th; for the 31st we vary the dish, with the popular pasticho. However, this year, for New Year's Eve dinner, I made A delicious ham stuffed with olives and bathed in wine sauce, since I had all the necessary ingredients at home to prepare it. I want to emphasize that this recipe is my mother's, but I swear I made it myself, since my mother hasn't been in the kitchen for a while.

👩🍳 Todas las especies que quiera usar. El arte de mezclar especias se los dejo a los chefs; yo usé las que tenía en casa: orégano, ajo en polvo, paprika, comino, hojas de laurel, sal y pimienta. Tampoco quise saturarlo de sabores.
👩🍳 El vino. Es otro de los protagonistas de la preparación y se debe comprar el litro para la preparación que haremos.
👩🍳 Aceitunas.
👩🍳 Piece of pork leg. It will depend on the number of people attending the dinner. This one weighs about two kilos.
👩🍳 All the spices you want to use. I'll leave the art of mixing spices to the chefs; I used what I had at home: oregano, garlic powder, paprika, cumin, bay leaves, salt, and pepper. I didn't want to overload it with flavors.
👩🍳 Wine. This is another key ingredient in the recipe, and you should buy a liter for the recipe we are going to make.
👩🍳 Olives.
The preparation is easier than I thought based on the presentation and how exclusive it is to only eat it on this special occasion (at least in my home), but nothing could be further from the truth, because it is made just like any other dish that does not require advanced knowledge. First, I trimmed the excess fat from the pork; many will say, “Flor, what did you do?”, but honestly, I didn't like how it looked, and I only needed the meat so that it would look and taste good.


Once clean, I made “holes” in the ham to place the olives, so that it would cook well and, above all, so that the mixture that follows would cover the entire piece. Then, I cut it into medallions for presentation and cooking, which is up to the discretion of the person cooking.


The next step (trust me, it's all very quick and easy) is to mix all the spices with the wine and blend them to form a liquid that will coat the pork. Finally! I was able to use my blender for what it was made for, because I've had few opportunities to use it. How much wine? Well, enough to cover all the pork when it's time to cook it. I used half a liter from that bottle:




The next step is to let it rest for two hours and then bake it in the oven. In this case, since I don't have an oven and didn't want to put it in the deep fryer, I cooked it directly on my stove, and it turned out just as well as in the two aforementioned methods.

How did it turn out? DIVINE! Would I make it again? Only in December 😆. I can't imagine making it for any other occasion that doesn't include our hallaca (traditional dish), salad, and ham bread.
