Today i would like to share the recipe of Suji Halwa or Semolina Pudding It is traditional and classical Indian dessert recipe prepared with semolina, ghee and sugar. It is healthy and Delicious desserts which is prepared almost in every kitchen of India especially during auspicious occasions. There are various way of making of Halwa with these basic ingredients but 'm telling you the simplest and quickest way of Making it. It is served as a simple dessert for lunch or dinner meals. Serve the hot Halwa during the chilling winters, even as it contains clarified ghee and lots of Dryfruits, it help you to keep your body Warm. Try this recipe, 'm sure you gonna love it.

Ingredients📃
• 1 cup ghee(clarified butter).
• 4-5 Chopped almonds.
• 4-5 Chopped cashew.
• 6-7 raisins
• 1 cup Suji(semolina).
• 3 cup water.
• ¾ cup sugar(as per your taste).
• ¼ tsp cardamom powder
Process 👨🏻🍳

Heat ghee in a kadai or a thick bottomed pan to cut down on the risk of burnt suji, keeping flame low.

Add suji. Use a fine variety of suji and not the coarser variety.

start roasting the suji,Stir the suji continuously, so that it doesn't stick to the pan from the bottom. Be careful, keep the flame low, there is high chance of burning suji.

Roast it until it get aromatic and Golden brown in colour. If you not roast the suji well, you will not get the perfect texture in the halwa. There will be a slight raw taste in the halwa. You have to be careful in this step.

Add the water, triple the quantity of the Suji. As suji has tendency to absorb more & more water.

Continue stirring after adding the water. Pour gently and carefully, as the mixture sizzles and splutters.

further, add sugar and mix well until the sugar dissolves.For a lump-free mixture, stir well.

The mixture will start thickening. Stir often.The consistency is like that of pudding. Add the chopped Dryfruits. Keep stirring and cooking till you get the final texture as shown in the picture.

Serve the shot Suji Halwa, You can refrigerate the leftover halwa, can Serve anytime.
