PUMPKIN SOUP [ENG||ESP]

HI EVERYONE

I’d like to share with you how to make a delicious pumpkin soup. It’s a lovely recipe I learnt to make during my cookery classes; I love this sort of traditional, homely, comforting dish.

INGREDIENTS:

✓ 2 kg pumpkin
✓ 50 g margarine
✓ 100 g finely diced onion
✓ 200 g bacon
✓ 100 g finely diced leek
✓ ½ chicken stock (chicken bones, leek, celery, parsley, paprika, garlic, carrot and water)
✓ Béchamel sauce and chives for garnish
✓ Salt and pepper to taste.

PROCEDURE:

✓ Wash, peel and chop the pumpkin, cook until tender, strain and set aside.

✓ Melt the margarine in a pan, add the chopped bacon and cook until crisp. Then add the onion and leek, sauté for 1 minute, add the chicken stock, bring to the boil and then add the reserved pumpkin.

✓ After cooking for a further 5 minutes, reduce the heat, leave to cool and blend.

✓ Season with salt and pepper to taste.

✓ Garnish with béchamel sauce and chopped spring onions, ready to serve and enjoy!

CREMA DE CALABAZA

Les comparto la preparación de una deliciosa crema de calabaza, es una buena receta que aprendí a elaborar durante las clases de cocina, me encanta éste tipo de recetas tradicionales hogareñas y reconfortantes.

INGREDIENTES:

✓ 2 kg de calabaza (Auyama)
✓ 50 grs de margarina
✓ 100 grs de cebolla en brunoise
✓ 200 grs de tocineta
✓ 100 grs ajo porro en brunoise
✓ ½ de fondo de ave (huesos de ave, ajo porro, celery, perejil, pimentón, ajo, zanahoria y agua)
✓ Salsa bechamel y cebollin para decorar
✓ Sal y pimienta al gusto.

PROCEDIMIENTO:

✓ Lavar, pelar y trocear la calabaza, cocinarla hasta que esté tierna, colar y reservar.

✓ En una se funde margarina , añadimos la tocineta picada, cocinar hasta cristalizar después se incorpora la cebolla y el ajo porro, saltear por 1 minuto, agregar el fondo de ave, dejar hervir y seguidamente se adiciona la calabaza que estaba reservada anteriormente.

✓ Después de cocinar 5 minutos más, bajar de fuego, dejar enfriar y licuar.

✓ Sazonar con sal y pimienta al gusto.

✓ Decorar con salsa bechamel y cebollin picado, lista para servir y disfrutar!
