Recently when I was at home, I had Rajma chawal, and it was was extremely delicious and Today , I was craving for it so I thought to prepare it at by myself. I never prepared it earlier, so I didn't know much and I called my mom to ask the recipe to prepare it. It won't be wrong to say that the credit goes to my mom and believe me it turmed out finger licking good. It is among one of the most missed home cooked meal when you are away from home. Also , it is comfort food of most of the Indians.
Rajma which is also know as kidney beans and it is gwown and cultivated in colder Himalayan regions in North India over the hill top. Mostly cultivated in Uttarakhand, Jammu and Kashmir and in Himachal and it's costly as it is rich in protein. It is also famous in Punjab cause Punjabis like spicy food and they make it all spicy and tangy.
These are the rajma beans I'm using this time. There are different type of rajma and the protein content in also different. The highly protein rich rajma variety is grown in Jammu and Kashmir and the name is Bhaderwah Rajma. Also Chitra variety of rajma is high in protein and cultivated in Himachal. We also grow this variety in our farms. I'll show you someday.
Let's prepare our Rajma Chawal with some simple Ingredients-
Ingredients
Rajma
Turmeric 1tsp
Salt 1tsp
Green chilies
Tomato 2
Onions 2
Oil 2 tsp
Coriander powder 2 tsp
Cumin powder 2 tsp
Dry Mango Powder 2tsp
Instructions
Soak Rajma one one day cause doing it will help to enhance the protein content in it and it will be easier for us to cook them. Otherwise it will take atleast 40 minutes to get cooked.
The next morning when I saw the the soaked rajma, the water was all soaked up and they were soft and big. Now it's time to put them in the pressure cooker and let them cook for atleast 25 minutes.
Now it's time to prepare the tadka and we need to chop some onions and tomatoes. If you like onions you can increase the quantity as well cause they enhances the flavor. I have chopped two onions. Now put some oil in the pan and let it heat for a minute.
This is our masaldani, a box that contain all the spices used in food. We eat very simple food, so you won't see much spices here. Now it's time to add chopped onions in the the oil and add some cumin Powder, coriander powder and turmeric powder in it.
Let it turn golden brown and then add chopped tomatoes in it. Mesh it well and then add salt to it. After a minute add water to it and also our rajma are well cooked now.
Here you can see our rajma are well cooked and now you need to add it in the tomato and onion paste.
Mix it well and let it cook for 5 minutes and it is well prepared now. You can have it warm or else you won't get the feeling of the comfort food. I have prepare chawal earlier so Coud'nt click pictures for you guys, maybe in the next one.
