I'm sharing my recipe for delicious meatballs stuffed with cheese. This recipe is very easy to prepare, and I know you'll love it for nutritious lunches. We serve them with white rice.

Les comparto mi receta de cómo preparar unas ricas albóndigas de carne rellenas con queso; esta receta es muy sencilla de preparar y sé que les encantará para los almuerzos nutritivos y las acompañamos con arroz blanco.

Preparation
In a bowl, mix the ground meat with the egg, garlic, parsley, and enough breadcrumbs to form a compact mixture. I used 3 tablespoons. Add salt to taste. Form the meat into balls, make a small indentation in each with your finger, and place a cube of mozzarella cheese inside. Seal the indentation well so the cheese doesn't leak out. Place flour in a cup and roll the meatballs in it. Then, place them on a plate.

Preparacion
En un bol se mezcla la carne con el huevo, ajo, perejil, pan rallado el necesario para que quede compacta la masa. Yo le puse 3 cucharadas. Al gusto sal. Se forman bolas de carne, con el dedo se hace un hoyo y se le coloca un cubo de queso mozzarella. Cerrar bien para que no se salga el queso. En una taza se pone harina y se pasan las bolas de carne. Se van colocando en un plato.

In a pot with a little oil, lightly brown the meatballs, then remove them. In the same pot, sauté the onions and garlic, then add the puree and blended tomatoes. Season with salt, oregano, and basil, or to your liking. Place the meatballs in the pot and fill them with cheese that has been previously cut into cubes; cover and cook over low heat for 20 minutes.

En una olla con un poco de aceite se doran ligeramente las albóndigas se van apartando y en la misma olla se sofríe la cebollas y los ajos, se agrega el puré y los tomates licuados, . Se sazona con sal, orégano y albahaca, o como más les guste. Se ponen las bolsas de carne y las rellenamos de queso previamente cortado en cuadros; se tapa y se cocina a fuego lento 20 minutos.

If the sauce is too thin, you can thicken it with cornstarch dissolved in a little water. I served them with rice, or with a salad if you prefer.

Si la salsa resulta muy líquida, puede espesar con maicena disuelta en un poco de agua. Yo las serví con arroz y si prefieren, con una ensalada.
