  • Good evening, dear friends! I wish you a happy start to the week! This time, I'm sharing a VERY healthy and nutritious recipe with you. Below, I explain step-by-step how to prepare a "delicious eggplant appetizer with carrots and bells peppers". You can use it as a side dish to accompany countless dishes or as a snack with crackers or bread. Let's put on our aprons to begin our fun process!
  • Buenas noches queridos amigos, les deseo un feliz comienzo de semana! En esta ocasión, comparto con ustedes una receta MUY saludable y nutritiva, a continuación les explico "paso a paso" como preparar un "delicioso antipasto de berenjenas con zanahorias y pimientos". Pueden utilizar como guarnición para acompañar infinidad de platillos o como pasapalo acompañado con: galletas saladas o pan tostado... Pongámonos el delantal para empezar nuestro divertido proceso!

  • INGREDIENTS: carrot, red bell pepper, onion, garlic cloves, eggplant, bay leaves, olive oil, lemon juice, pepper, dried oregano, coriander and salt.
  • INGREDIENTES: zanahoria, pimiento rojo, cebolla, dientes de ajo, berenjenas, hojas de laurel, aceite de oliva, zumo de limón, pimienta, orégano seco, cilantro y sal.

PREPARATION/PREPARACIÓN

  • Add 3 tablespoons of extra-virgin olive oil to a deep container. For this recipe, I usually also use 1 tablespoon of light olive oil to soften the intensity of the flavor. Add pepper, dried oregano, pink salt, bay leaves, and the juice of 1 lemon. Mix until well combined (set aside).
  • Incorporamos a un envase hondo 3 cucharadas de aceite de oliva extra virgen, para realizar esta receta suelo utilizar también 1 cucharada de aceite de oliva suave, para suavizar un poco la intensidad del sabor. Añadimos pimienta, orégano seco, sal rosada, hojas de laurel y el zumo de 1 limón... Mezclamos hasta integrar bien (reservamos).

  • We fry the onions, cut into julienne strips, along with the garlic cloves (finely chopped)... We sauté for 10 minutes.
  • Sofreímos las cebollas, cortadas en julianas junto con los dientes de ajo (finamente cortados)... Salteamos durante 10 minutos.

  • Next, we add our colorful "carrot"... We add the "bell pepper". For this recipe, I prefer to use "red bell peppers" to enjoy their slightly "sweet" flavor.
  • A continuación, agregamos nuestra colorida zanahoria... Colocamos el pimiento, para esta receta prefiero utilizar el pimiento "rojo", para así disfrutar de su sabor ligeramente "dulzón".

  • In this step, we add the eggplants (remove the skin)... Cook, stirring occasionally; you can add small amounts of water. The cooking process will take approximately 25 minutes, or until you see that it's ready.
  • En este paso, integramos las berenjenas (extraemos la piel)... Cocinamos mezclando de forma ocasional, pueden colocar pequeños toques de agua. El proceso de cocción tardará aproximadamente 25 minutos o hasta comprobar que está lista.

  • We add our succulent vegetables to the reserved dressing and mix gently. Cover and refrigerate for 3 hours, so that all the ingredients are well coated in our delicious dressing.
  • Incorporamos nuestras suculentas verduras al aderezo que teníamos reservado, mezclamos con movimientos suaves y envolventes. Tapamos, reservamos en la nevera durante 3 horas, para que TODOS los ingredientes se impregnen bien con nuestro apetitoso aderezo.

  • Enjoy its beautiful colors! When serving, add the finely chopped "coriander" leaves; this ingredient will provide a very aromatic contrast!
  • Disfruten su hermoso colorido! Al momento de emplatar, colocamos las hojas de "cilantro" finamente cortadas, este ingrediente aportará un contraste MUY aromático!
