¡Buen día amigos de Hive Food! ¡Feliz viernes santo! Y espero que donde se encuentren estén de maravillas. Aquí seremos fieles a la tradición del 29 y es por eso que escribiré esto temprano para luego ir a hacer el almuerzo. No sólo es importante no comer carnes rojas, sino que a nosotros las pastas nos encantan, y hoy es día de ñoquis. Y siguiendo esta cosa clásica, les mostraré hoy cómo hice las mini tortas de ricota, otra tradición, pero esta receta es la que me acompaña desde toda la vida y la voy a compartir hoy con una historia bonita. Además, es la misma receta que les mostré en algún momento del pasado, siempre trae a mi abuela en el recuerdo y mi madre disfruta mucho este mimo.

La cosa es que fue el cumpleños número 67 de mi madre y me pidió que haga algo “pequeño” en realidad su idea era poder llevar algo para compartir en su trabajo y hace muchos años cuando cocino envío algo para allí, no son muchos y los conozco bastante, esto me da la pauta de qué cosas les gustan más que otras, jaja.

Para la decoración podemos usar azúcar impalpable espolvoreada arriba, yo este paso no lo haré porque serán transportadas mañana, así que de quererlo, mi madre deberá llevar el azúcar impalpable y servilar allí, haha.

En fin, el comienzo es muy simple, manteca pomada y azúcar, mezclamos e incorporamos muy bien, añadimos a esto la ralladura del limón, el huevo y por último el harina, lo ideal es no tocar mucho la masa en este momento, asi que incorpora bien, yo le doy una pequeña asentada con las manos y a la heladera directamente.

El relleno es muy simple, lo que debemos hacer es desarmar bien la ricota, porque es un queso que suele venir muy apelmazado para quitarle todo el líquido, nosotros lo aireamos un poco y luego agregamos un huevo y el azúcar, añadimos las pasas y reservamos. Siempre digo que tengo algunas recetas encantadoras, que me encanta hacer una y otra vez, y que por ejemplo tienen este detalle, debajo de todos los ingredientes tengo una anotación “sale una grande = 8 pequeñas” me encanta saber ya las dimensiones de lo que voy a cocinar, esté donde esté sé que rinde de esta manera.

La verdad es que no hay más truco, así como estamos, al horno por 30 minutos aproximadamente, se desmoldan enseguida y no recomiendo heladera para ellas, no van a quedar mal, pero siendo una masa con manteca puede endurecerse o hasta tomar olores de cualquier otra cosa que se encuentre en la heladera.

Mientras tenía las tortas en el horno, lavé todo y dejé la cocina limpia y lista para quien venga detrás de mi y quiera cocinar, terminé de cocinar, las retiré del horno, apagué todo y disfruté mi logro, mi madre estuvo muy contenta, y al día siguiente sobraron algunas para mi merienda también, jaja. Pero sobre todo, ella pasó un lindo cumpleaños! Les mando un beso a todos, y que tengan buen fin de semana!!
