🤍🍲 Simple & Delicious Bengali Khichuri | Cozy Winter Comfort Food ❄️

🤩Good afternoon, Hive community food lover friends. Welcome to my new blog on this cool winter afternoon. Winter means enjoying plenty of delicious food. During winter, we Bengalis really love to eat khichuri. It doesn’t feel as enjoyable to eat khichuri in summer, but winter and khichuri feel like a perfect combination. Khichuri with bhaji and bhorta makes a perfect platter.

😚Today, I’m going to share a simple khichuri recipe with you. Along with it, I made peanut bhorta and fried eggs. Have you ever tried peanut bhorta? If you haven’t, you should definitely try making it this way. Peanut bhorta tastes amazing with hot rice as well. And those who have tried it already know how delicious it is. If you follow my recipe, the bhorta will turn out really tasty. So without making the introduction any longer, let’s get into today’s main recipe.
🌶️Ingredients for Khichuri:
Chickpeas (cholar dal)
Mung dal
Rice
Salt
Chopped onion
A few garlic cloves
Turmeric powder
A few green chilies
Coriander powder
Cumin powder
Chili powder
Garam masala
Rice bran oil
🥘Cooking Method:
For making khichuri, I used two types of lentils: mung dal and chickpeas, half a cup of each. I took two cups of rice. I don’t like dry khichuri; I prefer it a bit soft. I washed and mixed the rice and lentils well. On the side, I chopped onions, sliced a few green chilies, and crushed some garlic cloves and whole spices. For your convenience, I showed everything nicely in a container in the video, and I also shared separate photos of the ingredients.

🍚I cooked the khichuri in a rice cooker. First, I took the rice cooker pot and added chopped onion, chopped chilies, garlic, oil, salt, powdered spices, garam masala, and bay leaves, and mixed everything well. This step is very important—you need to mash and mix all the spices, onion, and garlic properly.

The better you mash and mix them, the better the aroma and taste of the khichuri will be. If you mix the rice and lentils together with the spices at this stage, the flavor won’t come out as nicely. So this is a tip: always mix the spices first, then add the rice and lentils.

🫕After mixing the spices well, I added the rice and lentils and then added enough water.

The amount of water depends on the type of rice you’re using and whether you want dry or soft khichuri. Since I used chickpeas, I needed a bit more water. I used 6 cups of water so the lentils would cook properly and the khichuri would be soft. Then I turned on the rice cooker. I stirred the khichuri occasionally so the spices wouldn’t float on top and everything would cook evenly. It took about 40 minutes for my khichuri to cook perfectly.

Peanut Bhorta:
Now I’ll share how I made peanut bhorta to go with the khichuri. Peanut bhorta is one of my favorite dishes.
Ingredients:
Peanuts
Salt
Mustard oil
Chopped onion
Garlic
Dried chilies
🥜First, I dry-roasted the peanuts lightly. Then I rubbed them with my hands so the skins came off. You can make bhorta with the skins on, but I prefer removing the red skin. I ground the peanuts on a stone grinder. Since my grinder is small, I took out half of the ground peanuts and kept them aside for convenience. Then I added chopped onion and slightly crushed garlic cloves. I added mustard oil and dried chili powder made from roasted dried chilies. I mixed everything well with the peanuts. I used a bit more garlic because it makes the bhorta taste even better. Lightly crushed onion and garlic give an amazing flavor. And just like that, my peanut bhorta was ready.

Finally, I served the khichuri nicely with fried eggs, a green chili, and onion slices. A complete Bengali meal was ready. In India, khichuri is considered a staple food, and we Bangladeshis also love khichuri very much. That’s all for today’s recipe. I really enjoy eating khichuri with peanut bhorta this way.
