En estos días he visto varias publicaciones de ustedes compartiendo deliciosas preparaciones con viandas, y eso me inspiró a realizar este domingo un almuerzo familiar donde el plato principal fue un delicioso puré de viandas mixtas.

Para esta preparación utilicé tres variedades de viandas: calabaza, boniato y malanga, logrando una textura suave y una combinación de sabores que se complementan entre sí.

Además, incorporé una pasta de aguacate que aportó cremosidad y suavidad a la preparación, creando una combinación novedosa que complementó perfectamente este almuerzo.

Ingredientes generales del menú

(Para 4 comensales)

-Boniato: 2 unidades medianas.
-Calabaza: 1 libra.
-Malanga: 1 unidad grande.
-Aguacate maduro: 1 unidad.
-Especias mixtas: al gusto.
-Comino: 1 sobre.
-Ajo: 7 dientes.
-Zumo de limón: 3 cucharadas.
-Sal: 1/3 de cucharada para la cocción de las viandas y 1/4 de cucharada para la preparación del aguacate (puede variar al gusto).
-Aceite de oliva: 2 cucharadas.

Modo de confección

Para realizar esta receta dividí la preparación en dos momentos: primero elaboré el puré de viandas mixtas y luego preparé la pasta de aguacate que complementaría este plato.

Pasos para crear el puré de viandas

Inicié el proceder lavando bien las viandas que emplearía: calabaza, boniato y malanga, utilizando abundante agua.

Seguidamente retiré la cáscara del boniato y la malanga. En el caso de la calabaza decidí conservar su cáscara, solamente lavándola muy bien, ya que aporta nutrientes a la preparación.

Una vez limpias, corté las viandas en trozos medianos. Al realizar la cocción en olla de presión es recomendable utilizar trozos más grandes para evitar que se deshagan demasiado; mientras que en una olla tradicional pueden cortarse más pequeños para facilitar la cocción.

Luego incorporé las viandas en una olla con suficiente agua hasta cubrirlas y añadí 1/3 de cucharada de sal. Cerré la olla y dejé cocinar durante 15 minutos aproximadamente bajo presión.

Transcurrido este tiempo, las viandas ya estaban blandas. Con ayuda de una espumadera las trasladé a un recipiente y las aplasté con un tenedor hasta obtener un puré homogéneo.

A este puré le añadí una cucharada de aceite de oliva, un toque de comino y dientes de ajo triturados. Luego lo reservé para continuar con la preparación.

Pasos para crear la pasta de aguacate

Para esta preparación utilicé un aguacate maduro. Lavé el aguacate, retiré su semilla y separé la pulpa de la cáscara.

Preparé una mezcla con una cucharada de aceite de oliva, tres cucharadas de zumo de limón, tres dientes de ajo triturados, un toque de comino ligeramente machacado y un punto de sal.

Luego incorporé la pulpa del aguacate y la aplasté con ayuda de un tenedor hasta lograr una pasta uniforme.

Finalmente llevé la preparación al refrigerador durante unos 20 minutos para que tomara mejor consistencia.

Después de este tiempo, la pasta de aguacate estuvo lista para servir junto al puré de viandas, creando una combinación de sabores y texturas en un solo bocado.

These days, I have seen several of your posts sharing delicious preparations with root vegetables, and that inspired me to prepare a family lunch this Sunday where the main dish was a delicious mixed root vegetable purée.

For this preparation, I used three varieties of root vegetables: pumpkin, sweet potato, and malanga, achieving a smooth texture and a combination of flavors that complement each other.

In addition, I incorporated an avocado paste that added creaminess and softness to the preparation, creating a unique combination that perfectly complemented this lunch.

General menu ingredients

-Sweet potato: 2 medium units.
-Pumpkin: 1 pound.
-Malanga: 1 large unit.
-Ripe avocado: 1 unit.
-Mixed spices: to taste.
-Cumin: 1 packet.
-Garlic: 7 cloves.
-Lemon juice: 3 tablespoons.
-Salt: 1/3 tablespoon for cooking the vegetables and 1/4 tablespoon for preparing the avocado (can be adjusted according to taste).
-Olive oil: 2 tablespoons.

Preparation method

To make this recipe, I divided the preparation into two moments: first, I prepared the mixed root vegetable purée, and then I made the avocado paste that would complement this dish.

Steps to create the root vegetable purée

I started by washing well the vegetables I would use: pumpkin, sweet potato, and malanga, using plenty of water.

Then, with the help of a knife, I removed the skin from the sweet potato and malanga. In the case of the pumpkin, I decided to keep its skin, washing it very well, since it provides nutrients to the preparation.

Once cleaned, I cut the vegetables into medium-sized pieces. When cooking in a pressure cooker, it is recommended to use larger pieces to prevent them from breaking down too much; however, when using a regular pot, they can be cut into smaller pieces to make cooking easier.

Then, I placed the vegetables in a pot with enough water to cover them and added 1/3 tablespoon of salt. I closed the pot and cooked them for approximately 15 minutes under pressure.

After this time, the vegetables were already soft. With the help of a slotted spoon, I transferred them to a container and mashed them with a fork until obtaining a smooth purée.

To this purée, I added one tablespoon of olive oil, a touch of cumin, and crushed garlic cloves. Then, I set it aside to continue with the preparation.

Steps to create the avocado paste

For this preparation, I used a ripe avocado. I washed the avocado, removed the seed, and separated the pulp from the skin.

I prepared a mixture with one tablespoon of olive oil, three tablespoons of lemon juice, three crushed garlic cloves, a touch of lightly crushed cumin, and a pinch of salt.

Then, I incorporated the avocado pulp and mashed it with a fork until achieving a smooth paste.

Finally, I placed the preparation in the refrigerator for about 20 minutes so it could achieve a better consistency.

After this time, the avocado paste was ready to be served together with the root vegetable purée, creating a combination of flavors and textures in a single bite.
