Today, I'm excited to share my special version of pinakro.
Traditionally, pinakro is made with saba bananas cooked in coconut milk, sugar, and a pinch of salt.
But I decided to add a twist today, I will add some sweet potatoes!
Trust me, the result is so tasty and perfect for any time of the day.
Let's get started with the step-by-step process.
Sweet Coco Duo
Ingredients:

• 4 saba bananas or plantains
• 4 sweet potatoes
• 1 coconut for coconut milk extraction
• 1/2 cup brown sugar
• 1/4 tsp salt
Preparation:
• First, I peel the saba bananas then I slice them into bite-sized pieces. Same with the sweet potatoes. After that, I move on to extract the fresh coconut milk. Squeeze it with a bit of water. Then, strain it using a cheesecloth.

• With everything ready, I combine the coconut milk in the saucepan with sugar, a pinch of salt, the sliced sweet potatoes, and the banana pieces.

• I cook it over medium heat and bring it to a simmer. I stir occasionally to prevent it from sticking and to ensure it cooks evenly.

• I continue to cook, stirring now and then, until the sauce begins to thicken and the sweet potatoes are tender. This takes about 20 minutes.

• Once the mixture has thickened to my desired consistency, I turn off the heat. Then I scoop it into a serving bowl.

And that's it! We enjoyed it as a merienda, paired with a hot coffee.
