
During our recent visit to my parents' house, it was the time they stepped out because they were attending a wedding.
So it was hubby and I that were left.
Before leaving, my mom already gave us instructions on what to cook for lunch.
It was the salmon belly.
As you may know, salmon belly is one of the best parts of the fish.
It's tender and has natural oils that can enhance a soup.
So, what we decided to cook is a sinigang, a beloved Filipino soup, that is sour yet comforting.
Ingredients:

• 500 g salmon belly
• 1 big bunch pechay
• 2 medium tomatoes
• 2 small red onions
• 3 cloves garlic
• 1 thumb-size ginger
• 2 pieces green chili
• 1 pack sinigang mix
• 2 tablespoons fish sauce
• 1 teaspoon black pepper
• 1 teaspoon salt
• 5-6 cups water
Step-by-step procedure:


• Heat about 1 tablespoon of cooking oil... then add the garlic, red onions, sliced ginger, and the tomatoes. Sprinkle a little salt and black pepper, then sauté for about 1-2 minutes until they soften.

• After that, add 5-6 cups of water, and bring it to a boil.

• Once boiling, add the sinigang mix and fish sauce. Stir until the seasoning dissolves.
✨ Tip: Make sure to taste and adjust if needed.



• Continue by cooking the salmon belly in the pot, followed by the green chili and the pechay. Let it cook for about 5-7 minutes until the fish is cooked.
✨ Tip: Make sure to add leafy vegetables last as they cook very quickly.
On my end, I hadn't even tasted the broth yet when I put the salmon belly, pechay, and green chili. So when I finally did, it didn't quite meet the sourness and saltiness I was hoping for. So while the pechay was already cooking in the pot, that's the time I adjusted the seasoning. 🤦🏼♀️ And because of that small delay, the pechay looked a bit overcooked. Though, it wasn't that bad.
And that's it!
The soup was still comforting and delicious.


The salmon belly absorbs the sour and savory broth, and the fatty layer gives a melt-in-your-mouth quality. Yum! 🤤
