Today, I want to share with you a super refreshing dish I made for our lunch. It's Ensaladang Mangga, also known as green mango salad. 😋
I plan to have this when my hubby comes home with Indian mangoes. It's freshly picked from the tree, so it's super crisp and firm.
I planned to pair it with fried chicken. It will be the perfect side dish.
Ingredients:

• 2 large green indian mangoes
• 1 small red onion
• 2 small tomatoes
• 1 teaspoon salt
• 2 teaspoons brown sugar
Preparation:

First, I washed the mangoes well. Then, I peeled them and removed the seeds. I sliced the flesh into small cubes. And since these were freshly picked, the meat was so firm and crunchy. 🤤

Next, after putting the mangoes in a clean bowl, I added the chopped onions and tomatoes.

Now for the flavor, I added a little salt, and a tiny bit of sugar. Then, I tossed everything together until all the mangoes were coated evenly.
And tadaaa!!




We also cooked fried chicken to be paired with this ensaladang mangga.

We ate it with hot steamed rice, and it was such a satisfying lunch. 🤤
Aside from fried chicken, this will also go well with fried fish, grilled pork, or even crispy pata. Actually, it really goes with almost anything. 😅
