Pechay With Chicken Stir-Fry: Easy, Yummy And Satisfying

‎Sometimes, chickens can feel a little too plain when it's all by itself. Today I thought of cooking some chicken for dinner. However, I realized that I needed to consider some vegetables to pair well with it.

‎There were so many choices but this fresh, bright-green pechay caught my eye.

‎The vendor said it was P150/$2.55 per kilo. So we just bought P30/$0.51 worth. Enough to stretch the chicken and make the dish more nutritious.

‎And one thing I love about pechay is that it's rich in vitamins, like Vitamin C, K, and A. Good for immunity, bone health, and eyesight.

‎So today, I'm happy to share with you what we cooked with it.

Pechay With Chicken Stir-Fry

Ingredients:

‎• 300 g chicken
‎• 1 bunch pechay (bok choy)
‎• 3 cloves garlic
‎• 1 small onion
‎• 2 tbsp soy sauce
‎• 1/4 cup water
‎• salt and pepper
‎• 2 tbsp cooking oil

Cooking steps:

• ‎I began by heating oil in the pan, then tossed in the garlic and onion, until they turned soft and fragrant.

• Next, I added the chicken and cooked it for about three to four minutes, just until the edges turned a light golden brown.

• ‎After that, I splash some soy sauce and let it cook for a minute. Then pour in some water, cover the pan, and allow it to steam for about twenty minutes, so that the chicken becomes tender.

• When it was finally tender, I added the pechay, stirred it, and let it simmer for two to three minutes.

Note: Pechay cooks very fast so don't leave it too long, or else it becomes soggy, dull, and loses nutrients.

• And for the final touch, I sprinkle with salt, pepper, and a pinch of sugar... to taste.

‎We matched this with hot rice. And also added some chili to make the dish more enjoyable.

‎If you're a chili lover, try it too. It will make the dish extra yummy and satisfying. 😋

‎Also, you can try adding coconut milk to this dish, if you want to make it richer.
