This is another favorite dish for many Thais, and it's well-known for its delicious, easy-to-eat, and healthy flavor. Let's take a look at the ingredients and how to make it.
Ingredients
- 200 grams chicken
- 200 grams coconut milk
- 3 dried chilies
- 20 grams shallots
- 10 grams kaffir lime leaves
- 10 grams fingerroot
- 2 cloves garlic
- 20 grams red curry paste
- 200 milligrams water
- 1 teaspoon seasoning powder
- 1 tablespoon fish sauce
Methods
- Boil the dried chilies, onions, garlic, fingerroot, and lemongrass in plain water. Then, add the chicken and cook until cooked through, then turn off the heat.
- Blend the boiled chicken, dried chilies, onions, garlic, and fingerroot together in a blender until smooth.
- Pour the milk into a hot pan and stir until the oil separates slightly. Add the curry paste and stir to dissolve. Then add the finely ground chicken.
- Then, mix well. Add the chicken stock from the previous cooking to make the broth less rich. Season with fish sauce and seasoning powder. Sprinkle with fresh chilies and kaffir lime leaves.
- Meanwhile, prepare the fresh vegetables and blanch the Khanom Jeen noodles. Since Khanom Jeen noodles are dry, they must be blanched first, then formed into balls. Drain and serve with fresh vegetables.
