The weather was cold, so I wanted to find something hot to slurp down to match the atmosphere. I walked to the refrigerator and saw a little chicken, so I wanted to make noodles. Noodles are a favorite menu, but I rarely make stewed beef because I want them to be very tender. Today I'm taking everyone to make stewed chicken noodles. Let's take a look at the recipe and ingredients.

Ingredients
- 4 large chicken thighs
- 1 carrot
- 1 onion
- 1 teaspoon ground cinnamon
- 1 star anise
- 1 teaspoon black pepper
- 1 teaspoon coriander seeds
- 1 teaspoon cumin powder
- 1 cardamom pod
- 1 teaspoon seasoning powder
- 1 tablespoon sweet soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon salt
- 1 tablespoon soy sauce
- 5-6 pieces of celery, chopped
- 500 ml water
Methods
- Finely pound the coriander seeds and black peppercorns by hand to enhance the aroma. Set aside.


- Fry the garlic, ginger, and other spices in sesame oil until fragrant. Add the onion and continue to fry until fragrant.
- Add water and all the seasonings and bring to a boil.

- Add the chicken to the broth or stir-fry with the spices first. Then add the carrots and celery.


- Turn the heat to low and simmer until tender, about 1-2 hours, or until the chicken is tender.

- Prepare the noodles by boiling them. Add vegetables of your choice and transfer them to a bowl. Then, add the simmering broth and season with the onion and garlic. Serve.

- Taste the seasoning first. If you want to add more spice, add more chili peppers and vinegar. If you prefer a saltier flavor, add more fish sauce. This recipe is guaranteed to be delicious and full of spices.


And here's the fragrant herb-infused stewed chicken noodles. It's missing a few things. If you have shiitake mushrooms or kohlrabi seeds, they'll enhance the flavor. However, it's up to the recipe; there's no set rule; you can add more.
