It's another menu that I like to eat but don't make it often because no one in my family likes it, so I rarely make it. This time, I wanted to make it in an easy way by modifying the ingredients I have. Let's see how to make it.

Ingredients (2 dishes)
- Khanom Jeen 200 grams
- Curry paste 50 grams
- Canned mackerel 1
- Water 200 ml
- Shallots 20 grams
- Coconut milk 50 grams
- Kaffir lime leaves 5-10 leaves
- Fingerroot 10 grams
- Fish sauce 1 teaspoon
- Fermented fish. 1 tablespoon
- Seasoning powder 1 teaspoon
- Spring onion 20 grams
- Various vegetables
Preparation steps
- Stir-fry the mackerel until the meat is a bit dry, then add the curry paste. Add coconut milk and stir-fry until the coconut milk separates, then add shallots.
- Add water, then add dried galangal (if you have fresh galangal, it's even better), add kaffir lime leaves.
- Leave the vegetables for a while until the spices are cooked and softened, so they will be fragrant. Then start to season, add fish sauce, seasoning powder, fermented fish sauce, taste it, if you like a certain flavor, you can add more.
- In the meantime, boil the rice noodles and prepare the vegetables to eat with the rice noodles. Then, check the rice noodles curry. If it's ready, add the spring onions, turn off the heat and serve.
And this is my rice noodles with fish curry. When eating, pour the rice noodles over the curry and add your favorite vegetables. Today I got fresh vegetables and pickled mustard greens, it's very delicious.
