Hello bloggers and food lovers! Today I’m making bolen, a sweet treat typically made from puff pastry with various fillings like banana, chocolate, or cheese. This time, I’m making my own homemade bolen dough with a sweet chocolate and cheese filling. Let’s get started!
Ingredients:
- 100 grams margarine
- 200 grams all-purpose flour
- 2 tbsp powdered sugar
- 50 ml milk
- 1 tbsp cooking oil
- cheddar cheese
- chocolate
- 1 egg yolk
Steps:
Dough A:

Place 75 grams of all-purpose flour into a bowl
Add 50 grams of margarine

- Add the cooking oil, then mix until well combined and forms a dough

- Let it rest and chill in the refrigerator for 30 minutes
Dough B:

Place 125 grams of medium-protein flour into a bowl
Add powdered sugar to the bowl

- Add the 50 gram margarine and milk to the bowl

Stir until well combined and forms a dough
Let rest and chill in the refrigerator for 30 minutes

- After 30 minutes, remove the dough and take 10 grams of Dough A and 20 grams of Dough B

- Place Dough A on top of Dough B

- Combine the dough

Then roll up the dough and let it rest for 15 minutes
After 15 minutes, roll out the dough again until it’s thin enough

- Add chocolate pieces and grated cheese inside

Fold the dough into a square shape like this
Repeat until all the dough is used up

- Brush the bolen dough with egg yolk

- Add grated cheese

- Place in the oven and bake at 327°F or 150°C for 45 minutes

Let the bolen cool, then remove from the oven
Serve the bolen while cool

- The chocolate cheese bolen is ready to serve
