
Hi bloggers and food lovers, today I’m sharing a recipe for sweet and tangy lemon sugar cookies to enjoy as a weekend treat. These lemon sugar cookies are my entry for the Qurator's Hive Top Chef! hosted by @qurator. These cookies are very simple, look appealing with their yellow color, and are, of course, easy to make. Okay, let’s get started
Ingredients:
- 220 grams margarine
- 200 grams sugar
- 1 tsp vanilla extract
- 1 egg yolk
- 1/2 tsp baking powder
- zest of 2 small lemons
- 2 tbsp lemon juice
- 300 grams all-purpose flour
Instructions:


- Melt the margarine until fully melted

- Pour the melted margarine into a mixing bowl containing the sugar and baking powder

- Whisk until the sugar begins to dissolve and the mixture starts to expand

Crack the egg and separate the white from the yolk then add the egg yolk to the bowl
Stir briefly



Add the lemon zest and lemon juice to the bowl
Stir again





Gradually add the all-purpose flour until the dough begins to thicken and forms a fairly firm dough
Chill the dough for 30 minutes in the chiller


- After 30 minutes, remove the dough and scoop out 1 scoop of dough, then roll it in a mixture of sugar and lemon zest

Place on baking paper
Repeat until all the dough is used up


Bake the cookies in the oven at 320°F or 180°C for 45 minutes
Once done, turn off the oven and let the lemon cookies cool




- The lemon sugar cookies are ready to serve
