Today I am sharing a delicious and traditional breakfast recipe with you. These are Desi Ghee Lachha Parathas. They are not regular parathas because they are soft from inside crispy from outside and full of beautiful layers.
Lachha Paratha is a very popular breakfast in Pakistani and Indian homes. We especially love having it with a hot cup of milk tea. The combination of crispy paratha and hot chai is simply amazing.
So let’s start the recipe.
The night before I prepared the dough. I used 3 cups of flour and added 1 teaspoon of salt. Then I added water little by little as needed and kneaded the dough well until it became soft and smooth.

After kneading the dough I covered it and left it outside overnight so it could rest properly. Resting the dough makes it soft and easier to roll the next morning. It also helps in making the paratha nice and layered.
The next morning I divided the dough into small equal portions and made small dough balls. You can make the size according to your preference. Since I wanted to make around 10 parathas I divided the dough accordingly.

Now comes the most important part of making Lachha Paratha.
I took one dough ball and rolled it out with a rolling pin into a thin round shape. Then I spread Desi Ghee all over the rolled dough. Make sure the ghee is spread nicely so that the layers can form properly.
After adding the Desi Ghee I folded and rolled the dough in the way you can see in the picture. This step is what gives the paratha its beautiful layers. I carefully rolled the dough into a long shape and then wrapped it around itself to create a round dough ball.

Once the dough was ready I kept it aside and prepared the rest of the dough balls in the same way.
I made around 10 parathas today but you can make more or less depending on how many people you are serving.
After preparing all the dough balls with the Desi Ghee filling I took them one by one and rolled them again with a rolling pin. I gently rolled each one into a round paratha. Try not to press too hard while rolling because we want to keep the layers inside.
Now I heated my tawa properly. Once the tawa was hot I placed the rolled paratha on it.

As the paratha started cooking I added some more Desi Ghee on top and also cooked the other side with ghee. The ghee gives the paratha a wonderful aroma beautiful golden color and amazing taste.
I cooked the paratha from both sides until it became golden brown and crispy. You can gently press the paratha with a spatula while cooking so that all the layers cook nicely.
Once it was perfectly cooked I transferred it to a plate or serving tray.
I continued the same process with all the remaining dough balls. Altogether it took me around 30 to 45 minutes to prepare and cook all the parathas.
While the parathas were cooking I also prepared a cup of hot milk tea to serve with them. Honestly the combination of Desi Ghee Lachha Paratha and hot milk tea is one of my favorite breakfast combinations.

These parathas turned out absolutely delicious. They were crispy from the outside soft and flaky from the inside and had that wonderful taste and aroma of Desi Ghee.
There are so many ways to enjoy Lachha Paratha. Some people love eating it with achar. Some like it with yogurt. Some prefer it with an omelette. You can also enjoy it with your favorite curry or any breakfast dish.
But in our home we also love eating these parathas simply with a cup of hot milk tea. Sometimes simple food tastes the best.
