Easy and Delicious Aloo Pulao Recipe

I hope you are all doing well. Alhamdulillah, I am also doing great. Today I am back with another simple and delicious recipe that I love making for my family. This recipe is Aloo Pulao (Potato Pulao). It is a perfect choice for those who are vegetarian or for anyone who wants to enjoy a tasty meal without chicken or beef. We often make this pulao at home because it is budget-friendly, easy to prepare, and incredibly flavorful. My younger son prefers mild food, so I kept the spices light, but you can always adjust them according to your taste.

Ingredients

For this recipe, you will need:
1 kg Basmati rice
3 medium-sized potatoes
2 large onions
1 whole garlic bulb
2 to 4 green chilies
2 tomatoes
1 tablespoon tomato paste (optional)
Salt to taste
Turmeric powder
Coriander powder
Cumin
Mixed spice powder
Cooking oil
If you enjoy spicy food, you can also add Achar Gosht Masala for a richer and more aromatic flavor.

Cooking Method

Start by slicing the onions thinly. Heat some cooking oil in a large pot and fry the onions until they turn golden brown. This step gives the pulao a beautiful color and rich taste.
Next, add the chopped garlic and fry it for another minute until it becomes fragrant. Peel the potatoes and cut them into medium-sized pieces, just as shown in my pictures. Add the potatoes to the pot and fry them together with the onions and garlic for a few minutes.

Now add all the spices, including salt, turmeric, coriander powder, cumin, and mixed spice powder. Stir continuously because spices can burn quickly. As soon as the spices become aromatic, add the chopped tomatoes and tomato paste. Cook everything together until the tomatoes soften and the oil starts separating from the masala. This is the stage where all the flavors come together.

Meanwhile, I had already soaked the Basmati rice for about 15 minutes. Once the masala is ready, gently add the soaked rice to the pot and mix carefully so the grains do not break.
Now add water. The amount of water is very important. Too much water will make the rice mushy, while too little water will leave it undercooked. Once the water starts boiling, add the green chilies. I always add them at this stage because they give the pulao a wonderful aroma without making it too spicy.

Cover the pot with a tight lid and let the pulao cook on low heat (dum) for about 30 minutes. This slow cooking method allows the rice to absorb all the delicious flavors while staying fluffy and separate.

Fresh Mint Raita

I always serve this Aloo Pulao with a refreshing mint raita.
For the raita, blend together a handful of fresh mint leaves, fresh coriander, 2 green chilies, 1 or 2 garlic cloves, and a little salt. Mix this paste into plain yogurt until smooth. The cool and creamy raita pairs perfectly with the warm, flavorful pulao.

Finally, serve the hot Aloo Pulao with the mint raita and enjoy it with your family. It is a simple, comforting, and satisfying meal that is perfect for lunch or dinner.
