Pumpkin pie with a Christmas twist (Eng/Esp)

During the holiday season, we also enjoy delicious desserts, so I prepared a simple and practical pumpkin pie with a slight Christmas touch. I added prunes, which give it texture and an incredible flavor. This was my first time making this recipe, so here is my step-by-step guide.

Ingredients:

  • 5 tablespoons of sugar
  • 4 tablespoons of butter
  • 1/4 pumpkin
  • 1 egg
  • 100 grams of self-rising wheat flour
  • 12 pitted prunes
  • 3 cups of water

Preparation:

I washed the pumpkin, removed the seeds, chopped it into small pieces, and boiled it. I like to remove the seeds first, as this makes it easier to mash. Ten minutes was enough to soften it.

I put the butter and sugar in a bowl and mixed them until creamy. Then I added the egg and continued beating until I achieved a good consistency.

I let the pumpkin rest, mashed it, and added it to the previous mixture. Then I gradually added the wheat flour, resulting in a pasty mixture with some lumps, which is ideal for texture.

Finally, I cut the plums into small pieces and added them to the mixture. I baked it in the oven for half an hour. The result was fantastic: it was fluffy and slightly sweet, which complemented the flavor of the plums very well. Every bite was a December treat for the palate.

Lavé la auyama, retiré las conchas, piqué en trozos pequeños y las puse a sancochar. Me gusta desconcharla primero ya que esto me facilita el proceso para triturarla. Diez minutos fueron suficientes para que estuviera blanda.

En un envase coloqué la mantequilla y el azúcar y mezclé hasta obtener una crema. Luego añadí el huevo y seguí batiendo hasta lograr una buena consistencia.

Dejé reposar la auyama, trituré y la añadí a la mezcla anterior. Posteriormente fui agregando la harina de trigo poco a poco, quedó una mezcla pastosa con algunos grumos, lo que es ideal para dar textura.

Finalmente, corté las ciruelas en pedazos pequeños y se los agregué a la mezcla. Llevé al horno por media hora. El resultado fue fantástico, quedó esponjosa y con un dulzor ligero, lo que se complementó muy bien con el sabor de las ciruelas. Cada bocado fue una caricia decembrina al paladar.
