Roasted pumpkin empanadas (Eng/Esp)

This week I've been experimenting with empanadas, one of the most popular breakfast foods in my country. I bought a Tostiempanadas, a device that makes my life easier because it means I don't have to cook with oil and it has a timer that tells me when everything is ready. I've already made empanadas with oat flour, corn flour, and cassava flour, and now I'm going to make them with a mixture that features pumpkin as a special ingredient.

Ingredients:

-1/4 pumpkin
-100 grams of corn flour
-1 tablespoon of sugar
-2 cups of water
-50 grams of turkey ham
-50 grams of hard white cheese
-Oil

Preparation:

I removed the seeds from the pumpkin and chopped it up, including the rind, to achieve a better consistency. I put it on to boil with a pinch of salt. After 15 minutes, it had softened, so I removed the rind and mashed it until I had a creamy purée, to which I added half a cup of water, the corn flour, and a tablespoon of sugar. Then I kneaded it.

The next step is to make the empanadas. Based on the amount of dough, I calculated five. I took five balls of dough, one by one, and rolled them out on an oiled plastic bag until they were round. I added the ham and cheese filling, then joined the ends to form a crescent shape.

I turned on the Tostiempanadas, set it to preheat mode, and before placing the empanadas in the molds, I wiped the surface of the appliance with a napkin dipped in oil. I placed the empanadas in their corresponding spots, closed the lid, and in 7 minutes the timer alerted me that breakfast was ready: delicious, crispy, well-filled, and hot pumpkin empanadas.

Esta semana me he dedicado a experimentar con las empanadas, uno de los desayunos más populares en mi país. Y es que adquirí un Tostiempanadas, aparato que me facilita la vida puesto que me evita cocinar con aceite y dispone de un temporizador, el cual me indica cuándo está todo listo. Ya he preparado empanadas con harina de avena, de maíz, de yuca y ahora lo haré con una mezcla que presenta a la auyama como invitada especial.

Ingredientes:

-1/4 de auyama
-100 Gramos de harina de maiz
-1 Cucharada de azúcar
-2 Tazas de agua
-50 Gramos de jamón de pavo
-50 Gramos de queso blanco duro
-Aceite

Preparación:

Retiré las semillas de la auyama y la piqué con todo y corteza para obtener una mejor consistencia. La puse a sancochar con un punto de sal. A los 15 minutos ablandó, ahora sí quité la corteza y trituré hasta obtener un puré cremoso al cual le agregué media taza de agua, la harina de maíz y la cucharada de azúcar. Luego amasé.

El próximo paso es hacer las empanadas, según la cantidad de masa calculé cinco. Agarré cinco bolas de masa, una a una pasó por una base de bolsa plástica aceitada, las aplasté hasta obtener una circunferencia. Agregué el relleno de jamón y queso, luego uní los extremos hasta obtener la forma de medialuna.

Aparte, encendí el Tostiempanadas, lo puse en modo de precalentar y antes de colocar las empanadas en los moldes pasé una servilleta con aceite sobre la superficie del aparato. Coloqué las empanadas en su lugar correspondiente, cerré y en 7 minutos el temporizador avisó que el desayuno estaba listo, unas deliciosas y crujientes empanadas de auyama bien rellenas y calientes.
